Kettle Corn

This has been girls’ week at our house.  With the guys gone on a mission trip, Anne Marie and I have done pretty much whatever we please.   One day for lunch this week, we made a big pot of kettle corn and ate it with some fabulous mango tea (recipe forth coming)!  Yum!

Popcorn is a perfect snack food for movie watching or any other snacking occasion.  You can make it tons of ways with different kinds of toppings from sweet to savory.  It is extremely economical and perfect for a crowd.  This recipe combines the perfect sweet and salty combination!

I LOVE my Whirley Pop Popcorn Popper!  I got mine online from Amazon, but they also sell them at stores like Bed, Bath, & Beyond for around $20.  They are fun to use and healthier than microwave popcorn.  Of course if you don’t have one of these fun gadgets, just pop in a big pan on top of the stove.

I use coconut oil for a couple of reasons.  It has a higher heating point than some other oils which keeps the popcorn from burning.  Plus, it gives just the slightest hint of coconut flavor.  Not enough that you’ll think it tastes like coconut, but just really tasty.  With just four ingredients, this popcorn takes no time to make and tastes so good!

Ingredients:

  • 1/4 cup coconut oil
  • 1/2 cup popcorn kernels
  • 1/4 cup white sugar
  • 1 teaspoon salt

Directions:

In a Whirley Pop Popcorn Popper or in a large pot with a lid, heat the coconut oil over medium-high heat.

Add the popcorn kernels.

When the coconut oil sizzles, sprinkle the sugar over the popcorn kernels.

Cover and stir or shake the pan until the popping slows down.

Remove from the heat and pour the kettle corn into a large bowl.

Sprinkle with salt and toss.
